A turn against traditional Sauvignon Blanc displays luscious stone fruit aromas & ripe gooseberry. 5% barrel ferment (25% wild yeast) and thorough lees stirring has crafted a complex, rich palate balanced with nuances of passion fruit. Fine natural acidity gives this wine elegance and class, indicative of sharp vine management in our Waihopai vineyard. This wine has been carefully cellared for 18 months to allow full maturity. pH 3.30 TA 6.82g/L RS 2.5g/L.
